Spicy Mayo Tuna Egg Crisp
Need a high protein, low carb breakfast idea?— I got you. This spicy mayo tuna crisp is sooo easy to make in the air fryer, delicious, and will help you feel full for hours. This not only would be a great option for breakfast (add an egg !), it would also be great as lunch or even a quick snack. If you try this, let me know how you like it !
What you’ll need:
Servings: 2-3
7oz canned tuna (drained)
low carb tortillas
2 hard boiled eggs
2 tsps greek yogurt
1/2 tsp ponzu sauce
1-2 tsps sriracha
1/2 tsp sesame oil
salt
black pepper
seaweed snacks or furikake
Japanese mayo (optional)
Instructions:
Start off by hard boiling your eggs to your liking— I boiled for about 6 1/2 minutes for a medium-soft jammy yolk. (Don’t forget to submerge in ice bath to stop cooking process and easier peeling).
Prepare tuna mixture— Transfer drained tuna into a large mixing bowl and add in peeled hard boiled eggs, greek yogurt, ponzu, sriracha, sesame oil, salt, and black pepper. Mix well to combine, break eggs up with a fork. Cover with Saran Wrap and place in fridge to set.
Airfry low carb tortilla at 400F for about 8-10 minutes, or until edges are crisp. Make sure to flip hallway thru cook time.
Assemble crisp— add a few scoops of tuna mixture on top of crisp tortilla, followed by crushed up seaweed snacks or Furikake, more sriracha drizzle, and Japanese mayo is optional . ENJOY!
