Crispy Salmon Springrolls!

Springrolls are one of my ALL TIME favorite foods. I remember growing up as a kid, my mom would always have spring roll dinners a la carte were we sit together as a family and make our own rolls with our favorite ingredients. That tradition is still well lived as I now host my own spring roll dinner parties! I usually eat spring rolls just as is because the texture adds a nice chew. I decided to air fry them this time and add spicy noddles for the chew and ohhhh my goodness, the crunch was UNREAL. Give this a try, its a nice twist on a classic!

What you’ll need:

  • Rice paper

  • romaine lettuce

  • cucumber

  • prepared salmon

  • prepared shrimp

  • SamYang spicy noodles

  • seaweed snacks

  • sweet chili sauce (optional)

Instructions:

  1. Start off my prepping you veggies by rinsing and drying

  2. Separate romaine lettuce leaves and chop cucumber into long thin slices

  3. Make SamYang spicy noodles and set aside

  4. Dunk rice paper into bowl of hot water for 5 seconds

  5. Place damp rice paper onto plate and start assembling roll

  6. Start with lettuce, then cucumbers, salmon, and spicy noodles

  7. Place seaweed snack on top and roll halfway

  8. Cut shrimp in half (butterflied) and place pretty side down

  9. Continue rolling tucking in sides until all rolled up

  10. Airfry springrolls at 400 for about 5 minutes

  11. Let rolls cool for about 5 minutes before enjoying

  12. Serve with sweet chili sauce for dipping!
