Lemon Pepper Garlic Parmesan Chicken Salad

This is a great weeknight dinner idea! Its super easy, yet packed with flavor! My family LOVES this recipe and requests it at least once a week. YES, even my 11 year old asks for this SALAD! The chicken thighs come out juicy on the inside and crispy on the outside. The lemon pepper parmesan flavor is out of this world! Pair it with the dressed salad and WOWZA, you’ll be forever craving this salad!!

What you’ll need:

Servings: 4-6

  • 6-8 chicken thighs

  • 1 lemon

  • 1/3 cup mayonnaise or greek yogurt

  • 2 tsp salt free lemon pepper seasoning

  • 2 tsp garlic powder

  • 2 tsp grated parmesan cheese

  • 1/4 cup fresh parmesan shavings

  • salt

  • black pepper

  • romaine lettuce (2-3 heads)

  • 1 tsp red wine vinegar

  • 1 garlic clove

Instructions:

  1. Prep chicken thighs

    -Rinse, pat dry, and season with 1/2 lemon squeezed juice, mayo or greek yogurt, lemon pepper seasoning, garlic powder, grated parmesan cheese, and black pepper. Combine well.

    -Airfry chicken thighs at 400F for about 20-30 minutes. Skin side down halfway, then flip. Internal temp should reach 165 before consumption. Remove from arifry and set aside to rest.

  2. Prepare salad; If using prepackaged, skip this step.

    -Rip romaine salad into bite sized pieces into mixing bowl

    -Season romaine lettuce salad with salt, black pepper, 1/2 lemon squeezed juice, red wine vinegar, pressed garlic clove, and parmesan shavings. Toss to combine.

  3. To a serving dish, add chicken thighs and salad on the side.

  4. Enjoy right way!
