Lemongrass Beef Skewers

These lemongrass beef skewers are the most aromatic and scrumptious recipe you’ll ever make. The only thing you might have to get that’s out of the way is the main ingredient, which is LEMONGRASS. I wish I knew how to garden, id have fresh lemongrass on deck for days; Its such a unique herb and goes well with a lot of dishes! I honestly grab frozen precut lemongrass from my local asian market and just keep it in my freezer so I always have some. Lemongrass paste is also a great alternative and can be found at a lot of grocery stores! Try this one out, you’re going to love it!

What you’ll need:

Servings: 8-10

  • 6-8 lbs ribeye steak

  • 4 T lemongrass

  • 4 T lemongrass paste

  • 1 tsp chicken buiillon powder

  • 2 tsp dark soy sauce

  • 2 tsp fish sauce

  • 2 tsp oyster sauce

  • 3 tsp sugar or sweetener

  • 6 garlic cloves

  • 1 shallot

  • 3 tsp olive oil

  • wooden skewers

Instructions:

  1. If using wooden skewers, prepare by soaking sticks in water for at least 30 minutes to help prevent them from burning later.

  2. Start off by peeling garlic cloves and place into a blender or food processor.

  3. Cut shallot into two pieces and remove skin, place into same food processor.

  4. Drizzle olive oil into food processor and blend until garlic and shallot turns into paste. Add more olive oil if needed. Set aside.

    *If using fresh lemongrass, cut into pieces and add into food processor as well.

  5. Prepare steak.

    -Cut against the grain and slice thin.

    -Add thinly sliced steak to a mixing bowl and marinate with lemongrass (I used frozen precut and paste), chicken bullion powder, dark soy sauce, fish sauce, oyster sauce, sugar, and garlic/shallot paste. Combine well and transfer to a leak proof ziplock bag. Let marinate overnight, or at least 1 hour.

    *TIP: I like to take one small piece and pan sear it just to sample our the flavor. This way, if it needs adjusting you can do so now.

  6. Remove wooden skewers from water and pat dry.

  7. Assemble beef skewers by taking one steak slice at a time poking the skewer through the meat and alternating the steak back and forth until the steak is poked through a few times. Slide piece down and continue until skewer is filled to the top. (This creates an “accordion” affect so that the beef cooks evenly. ) Repeat until all beef is skewed!

  8. To cook, heat up a barbecue grill on medium heat and add let skewers sear on both sides for about 2-3 minutes each or until steak has some char and is cooked to your liking.

  9. Enjoy right away on its own, with some rice, or over papaya salad !
