Mung Bean Spicy Noodle Sauce

A quick, spicy, creamy, and delicious noodle sauce recipe— today i’m using mung bean noodles, but you can use any type of noodles you have; this sauce would be great with udon or even wide rice noodles !

What you’ll need:

Servings: 3-4

  • 6oz package of mung bean noodles, or any noodle of choice

  • 4-6 stalks green onions or chives

  • 4 tsps of japanese mayo

  • buldak spicy sauce

  • 1 clove garlic (pressed)

  • 1 egg yolk

  • 2 tsps golden mountain seasoning sauce

  • 2 tsps diluted sweet black vinegar

  • 1 tsp roasted sesame oil

  • fresh grated parmesan

  • 1 large cucumber (shredded)

Instructions:

  1. Start off by preparing noodles based off package instructions.

    *don’t forget to reserve about 1/2 cup pasta water

  2. Prep sauce— to a mixing bowl, combine japanese mayo, buldak spicy sauce to taste, pressed garlic clove, egg yolk, golden mountain seasoning sauce, sweet black vinegar, sesame oil, and some reserved pasta water . Quickly stir to combine while slowly transfering hot pasta water to gently firm up egg yolk .

    *Amount of reserved pasta water is to how you’d like consistency of your sauce— taste and adjust . Salt your noodles if needed .

    *if you don’t have golden mountain seasoning sauce, you can substitute for soy sauce— taste and adjust

    *if youre not a fan of the taste of raw garlic— you can quickly stir fry pressed garlic for a few minutes until they are golden and crisp— once cool, you can add to the sauce mixture

  3. Drain and rinse noodles — then add into sauce mixture . Mix in chopped green onions and mix well. Transfer to a serving bowl.

  4. Garnish with fresh grated parmesan and shredded cucumbers— ENJOY (:
