Umami Lasagna Soup

Ya read that right .

Servings: 8

What you’ll need:

  • box of uncooked lasagna noodles

  • 6 chopped garlic cloves

  • 1 chopped shallot

  • 1 chopped onion

  • 12oz ground turkey

  • 12oz ground sweet Italian pork sausage

  • salt

  • black pepper

  • italian seasoning

  • 12oz can crushed tomatoes

  • 32oz jarred pasta sauce

  • 32oz chicken broth

  • 1-2 tsps fish sauce (umami sauce)

  • 4oz cream cheese

  • 3 cups baby spinach

  • shredded mozzarella cheese

  • grated parmesan cheese

  • chili flakes

  • fresh chopped basil

Instructions:

  1. Start off by heating up a large pot on high and heat up a few tsps of olive oil— once pot is heated through, add in chopped garlic, shallot, and onions. Stir-fry for about 30 seconds-1 minute.

  2. Add in ground turkey and ground sweet pork sauage— season with salt, black pepper, and Italian seasoning. Stir fry for about 7 minutes or until meat is about 75% cooked through.

  3. Lower heat to medium and add in crushed tomatoes, pasta sauce, chicken broth, fish sauce, and broken up uncooked lasagna noodles. Make sure to push lasagna noodles into liquid. Stir to combine, cover pot and let simmer for about 12-15 minutes . (You can add more water or chicken broth to ensure noodles are covered— be sure to adjust seasonings if you do).

  4. Once noodles are soft and ground meat is fully cooked, turn off heat to low and add in cream cheese and baby spinach . Stir again to combine .

  5. To serve, add a few scoops to a bowl and top with shredded mozzarella, grated parrm, chili flakes for some heat, and fresh chopped basil. ENJOY !
