Zucchini Fries

These zucchini fries are SOOOO delicious and CRISPY that my fam didn’t even realize that they were eating vegetables instead of actual potatoes! Such an easy and delectable way to serve veggies. I love the crunch and the freshness from the basil garnish is a hit! I like serving it up with ranch and hot sauce mixed together, but feel free to use your favorite dipping sauce !

What you’ll need:

Appetizer Servings: 3-5

  • 2 zucchinis

  • 1 egg

  • 1/3 cup almond flour

  • 1 tsp onion salt

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1/3 cup Panko bread crumbs (or sub for cheese crumbs, or crushed up chiccarones)

  • Your fav ranch

  • your fav hot sauce

  • basil for garnish

Instructions:

  1. Start by rinsing and pat dry zucchinis

  2. Slice zucchinis into your fav “fries” shape. I just cut them into 1/4 in thick rectangles. Set aside.

  3. Prepare 3 dipping stations!

    -Crack egg into bowl

    -To a shallow dish, add almond flour and season with onion salt, paprika, and garlic powder

    -To another shallow dish, add Panko bread crumbs (or sub with cheese crumbs or crushed up chiccarones)

  4. Take one zucchini “frie” at a time and dip into almond flour, egg, then pan bread crumbs. Repeat until all zucchini fries are coated.

  5. Transfer zucchini fries to airfryer. Airfry at 400 for about 8-10 minutes, or until nice and crispy!

  6. Garnish with chopped basil and serve with ranch and hot sauce mixed together.

  7. Enjoy right away!
