Salmon Sushi Bake

Whenever i’m craving sushi and don’t feel like spending over $200 for my family and I to still be hungry after eating the rolls, I make this sushi bake! I LOVE how you can customize the protein to whatever you have in your fridge. Ive made this with imitation crab, shrimp, and my all time fav… SALMON! I love serving it up wrapped in a seaweed snack for a nice crunch! Ive also mace this sushi bake with cauliflower rice, and it was still amazing! So simple, easy, and delicious!

What you’ll need:

Appetizer Servings: 3-5

  • 1lb salmon

  • Japanese mayonnaise

  • sriracha

  • ponzu

  • sesame oil

  • furikake

  • seaweed snacks

  • 2-4 stalks green onions

  • masago

  • 2-3 cups cooked rice or cauliflower rice

  • rice vinegar or sushi rice seasoning

Instructions:

  1. Chop green onions and set aside

  2. Cut salmon into small bite sized pieces and place in mixing bowl

  3. To salmon mixing bowl, add 1 T each of the following: Japanese mayo, sriracha, ponzu, masago, and green onions.. Add 1 tsp sesame oil. Combine well and set aside.

  4. To a baking dish, add 2-3 cups of cooked rice or cauliflower rice. Season rice with 1 tsp rice vinegar or sushi seasoning. Mix well and spread evenly.

  5. Sprinkle furikake over rice layer

  6. Add salmon mixture next and spread evenly over rice

  7. Bake in preheated oven at 375 for about 15 minutes

  8. Remove from oven and let cool for about 5 minutes

  9. Garnish with more Japanese mayo, sriracha, green onions, and furikake on top

  10. Enjoy ! Serve as is, or wrapped in seaweed snacks for a flavorful bite!
