Stuffed Mushrooms

These cheesy stuffed mushrooms are an absolute hit every time I make them for my family ! So delicious, easy to make, and done in less than 20 minutes. I love the creaminess the ricotta gives and the richness from the mozzarella. The basil gives it a nice pop of freshness! Bookmark this for your next potluck and I promise you’ll be regretting you didn’t make more!

What you’ll need:

Appetizer Servings: 3-5

  • 9-12 large mushrooms

  • 1/2 cup ricotta cheese

  • 3-5 garlic cloves

  • 1/4 cup baby spinach

  • 3-5 fresh basil leaves

  • 1/2 cup shredded mozzarella cheese

  • salt

  • black pepper

  • 1 cup marinara

Instructions:

  1. Start off by cleaning mushrooms with damp paper towel. Make sure to remove all dirt/debris.

  2. Pop off mushroom stems and save for another recipe. Set aside.

  3. Mince garlic cloves and set aside..

  4. Slice basil leaves and set aside.

  5. Chop baby spinach into fine small pieces and set aside.

  6. Prep mushroom stuffing by combing 1/2 cup ricotta cheese, minced garlic cloves, chopped baby spinach, sliced basil(save a bit for garnish later), 1/4 cup shredded mozzarella, salt and black pepper. Mix well.

  7. Take one mushroom at a time and stuff with a heaping spoonfuls of cheese mixture. Repeat until all mushrooms are stuffed.

  8. Spoon a tsp of marinara on each mushrooms and stop with more mozzarella

  9. Airfry mushrooms at 400 for about 5-7 minutes, or until cheese its nice and bubbly!

  10. Transfer mushrooms to a serving dish and garnish with sliced basil Serve with more marinara sauce for dipping!

  11. Let cool for about 2-3 minutes before enjoying!!
